When I am studying I constantly need to snack on junk to save myself from boredom. However this time I tried something healthy which turned out to be extremely delish. I found plain tart shells at Marks and Spencers but was very confused with the filling options. There was a huge conflict in my mind between savoury tarts or sweet tarts but I guess I was in a mood for a some spicy something so I gave Potato Tarts a try. They look amazing right? They tasted just as good! I am sharing this recipe with you because I know you will love it just as much as I did.
You will need:
For the tarts:
4 prepared tart shells
2 medium size boiled potatoes, cut into cubes
salt, to taste
1 teaspoon pizza seasoning
1/2 spring onion, chopped
1/4th cup boiled corn kernels
For the sauce:
3 tablespoons mayonnaise
Handful of mint and coriander
1/2 teaspoon minced garlic
1 tablespoon Italian seasoning
1/2 teaspoon vinegar
salt, to taste
In a bowl mix potatoes and all other ingredients mentioned for the filling.
Fill the tarts with this mixture.
Blend all the ingredients mentioned for the sauce and pour a generous amount over the potato mixture.
If you like you can sprinkle crumbled feta cheese on top but that is totally optional.
Voila! The yummiest Potato Tarts are ready to devour.
The flavours when combined are so unique and anyone and everyone who eats these will keep asking for more. I can say that because I had another two for dinner the same night!!
