Pancakes with Cherry Compote


As a part of the #FoodieFebruary campaign on my Instagram I decided to make Pancakes with warm Cherry Compote from scratch for breakfast. It was my first attempt at making a compote and it turned out really well.

I found fresh cherries in the supermarket and I used those for the recipe. You can use frozen too.

For the pancakes-

Ingredients:

1 cup all purpose flour

1 egg

2 teaspoons baking soda

A pinch of salt

2 tablespoons sugar

1 teaspoon vanilla essence

1 cup Buttermilk/ Milk

Butter, for frying

Method:

Beat the egg until fluffy and then stir in all the other ingredients. The consistency must be a little loose but not too runny.

Heat butter. Pour the batter into the pan and cook on both sides until golden brown.

For the compote-

Ingredients:

1 cup pitted fresh/frozen cherries

2 tablespoons sugar

Method:

Heat the cherries and sugar in a pan until the juices and sugar have combined well. Once the cherries start softening turn the flame off.

Serve the compote with pancakes and whipped cream. You are going to love every bit of it. Bon Appetit!

Sinful Hot Chocolate

After I had the Hot Chocolate at the celebrated Angelina cafè I have been dying to have it again but I don’t see it happening anytime soon so I tried to recreate the recipe which more or less tastes exactly like the signature hot chocolate at Angelina. I love it! I can never forget my first sip. It is decadent,utterly dark and rich. Since winter is round the corner you can try this and have a cozy evening.

Ingredients:

1 and a half cups Whole Milk

1/2 cup Heavy Cream

2 teaspoons powdered sugar

8 ounces chopped Dark Chocolate

1/2 tsp Espresso Powder

Method:

In a saucepan whisk milk,heavy cream, sugar and espresso powder over medium heat until you see little bubbles forming.

Remove the saucepan from heat and add the chopped chocolate to it and whisk well until the chocolate melts completely. You can return the pan to low heat if the chocolate is not melting easily.

Serve with marshmallows or whipped cream.

It is my personal favourite and I would really recommend it to all my fellow chocolate lovers. Give it a try and let me know how you liked it.

Potato Tarts

Potato Tarts

When I am studying I constantly need to snack on junk to save myself from boredom. However this time I tried something healthy which turned out to be extremely delish. I found plain tart shells at Marks and Spencers but was very confused with the filling options. There was a huge conflict in my mind between savoury tarts or sweet tarts but I guess I was in a mood for a some spicy something so I gave Potato Tarts a try. They look amazing right? They tasted just as good! I am sharing this recipe with you because I know you will love it just as much as I did.

Baked Figs

 

Serves 4

  • 8 fresh figs
  • ½ teaspoon of cold unsalted butter per fig
  • 1 teaspoon of honey per fig
  • vanilla ice cream/ whipped cream

 

  1. Preheat oven to 375°F or 190°C
  2. Cut stems off the tops of the figs. Cut a cross in the fig and gently open it. Be careful not to cut them all the way to the bottom or spread too wide, or they will fall apart.
  3.  Place the figs stem side up in a baking pan.
  4. Cut ½ teaspoon squares of butter from a block, or measure with a spoon (which is hard to do with cold butter). Put a piece of butter inside each fig, carefully so the fig does not fall apart.
  5. Drizzle 1 teaspoon of honey over the fig and butter.
  6. Bake for approx. 8-10 minutes, until the fig opens up.
  7. Serve with ice cream or whipped cream and drizzle the sauce from the pan.

 


I usually make this dessert when I am in a mood for sugar free sweet something. It saves me from all the guilt. It is super yummy and super healthy( minus the ice cream) and I’d recommend it to everyone who is low on the iron levels.

I was longing to visit this place ever since it was opened in February so finally we made a reservation and reached one of the city’s most happening place. The Best Of Cheesecake Factory

 “Sometimes I wrestle with my inner demons, other times I just eat Cheesecake.”

One slice of creamy goodness is all you need to comfort and satisfy you and make you feel alive. Cheesecakes are magical and you can never go wrong with them. Lots of delicious cream cheese baked with a crunchy buttery base and a tangy or chocolatey topping is the best ever creation of man. I personally LOVE cheesecakes and The Cheesecake Factory is like my second home (how I wish it was home). There were times when Zo and I were made to wait for even 50 minutes but we didn’t give up. For the love of Cheesecake we sulked, got annoyed and bored waiting but we stayed back.
